Oil and fat containing food items are flushed with nitrogen. Why?

i. Oil and fat containing food items get oxidised in presence of oxygen and become rancid.
ii. Flushing of these food items with nitrogen avoid their contact with oxygen and 
inturn prevents rancidity.
